Guji Metekoma is in the Oromia region, named after the Oromo people. Located 1600 - 2100 masl above sea level, Guji has subtle variations in growing conditions which yield many unique profiles. Being at such high altitudes, this allows the cherries to mature slowly and give the coffee its clean cup with lots of clarity.
Fermentum Natural is an aerobic fermentation which is done directly on the drying beds. In order to enhance the most desired flavours and aromas, the raw, floated and rinsed cherries are inoculated with microorganisms and left to dry between 8 – 20 days until desired moisture level. So as the cherries are dried, aerobic fermentation takes place which gives the coffee its complex acidity, sweetness and body.
This coffee will excite you with molasses and brown sugar sweetness, malic acidity, peach and citrus fruits.
